Hippy Dippy Vegan Smoothie Recipe

In the morning, I relish every last second that I get to sleep-in—gotta get my standard eight and a half hours! (#sleepingbeauty) That leaves me with a HUGE problem: classic healthy breakfast foods can take forever to make and clean-up. Honestly, before becoming the Smoothie Queen I am today, I used to skip out on breakfast more often than not. Oh the shame!
I crafted this smoothie recipe with a few intentions in mind. 1) I needed to eat something substantial for breakfast. Not only does this smoothie contain three servings of fruits and vegetables, it also contains a great macronutrient ratio with healthy carbs, fats, and protein. 2) I needed more protein in my diet. Since switching to (mostly) plant-based, I had to put a little extra effort into getting enough protein and the pea protein powder I use in this recipe does the trick! 3) Finally, I needed breakfast to be fast. As in,
fast enough to keep up with me as I run out the door. Usually this smoothie takes no more than ten minutes to throw together, drink, and clean up.
Ingredients
- 1 cup of unsweetened vanilla almond milk
- 1 cup of spinach
- 1/2 banana, sliced
- 1/4 cup of blueberries
- 1 tbsp. almond butter
- 1 tbsp. cocoa powder
- 1 serving of pea protein powder
Directions
Add the almond milk, spinach, banana, and blueberries into a blender. Blend on high for 1 minute.
Add the almond butter, cocoa powder, and pea protein powder into the blender, and blend all ingredients together for 1 minute.
If the consistency is too thick, add water a ½ cup at a time. Optional
Serve immediately + enjoy!
